I can look into adding this in Lider. From my experience, I believe this is possible with career mode. However, I have not tried to change those values specifically myself. Might be worth looking into editing a custom hybrid career mode so mobile platforms could try to use it

What's stopping mods from being on mobile isn't the devs, but rather the App Store's (iOS) ToS not allowing them. Jundroo has no problem with mods being on mobile platforms, but it's policies outside of their control that are stopping them.
There are certain types of modifications that can be done on mobile platforms, such as UI packs or sub-assembly packs. Depending on your definition, you could also consider custom systems and career modes mods as well.
The current version of REO on the website is a bit unstable, and somehow still works after all of these years. Most likely your bugs are coming from there
I believe they're located at ~/Library/ApplicationSupport/com.jundroo.SimpleRockets2/Mods (I'm not a mac user myself, so I hope you understand this). In that folder, you place the .sr2modfile in that location. Then you can open the game and enable the mod on the main menu (In sandbox, you'll see this button at the top and sligthly to the right. In career, you'll need to select menu and then the Modifications button).
There are two different logs. The Local Log, and the Flight Log. The Local Log can be found in the inspector for the part with the program running. The Flight Log can be located on the right side of the screen in flight, it's the 4th icon down (on pc at least, not sure about mobile) and is shaped like a log.
Make sure to include </color> at the end of the string, as it could lead to issues. This basically just says that you're ending the color, returning it to the default.
It depends on what you're wanting to do it for. Do you have a use case that you can provide for toggling the gimbal? I quickly put this together, hopefully it can help you with what you're trying to do.

Look into the inputcontrollers for these parts. Some may be set to have an input of 1, and have 0 on deactivate set to true. Alternatively, they could be setting the input to that of the activation group itself. There are a lot of ways to do it.
Don't use multiple rotators, having linked joints like that for a control surface is a bad idea. What you should do instead is have 1 rotator, and make the inputs clamp(Pitch + Roll, -1, 1). You may need to flip the signs of pitch or roll depending on the location, but you can look at the new Wasp 3.0 and see how they're done there.
