Essential Mods: That depends. If you want realism, go for REO/SEO(Real/Stock Engine Overhaul and RSS(Real Solar System). Overload seems pretty important, too(Not stock yet).
Overload is basically the same, as far as I can tell.

You said you fixed the wings to make sure they're "pulling forwards" at a 45 degree angle. That has nothing to do with electric motors. That's it. Nothing else. If you see something with electric motors, congratulations. You need, 1) better glasses 2) a basic understanding of English, 3) sanity, 4) some sleep, or 5) all of the above.
Maybe try rotators on free spin with boosters and wings.
Also, have you increased the rpm on the motors?
I like both, but I think KSP is easier to keep going. SimpleRockets 2 gets boring after a while, and I forgot SR2's controls (probably because I'm using Blender)
Check the roadmap under development.
It shows multiple bug fixes and some file movement.
The next next update might have parts, like command pods and navballs.

Do you mean crew capsules?
