Ps I used ion engines that are modded to barely use any fuel and pump out massive amounts of thrust so it's not realistic by any means but it is fast and no matter how many times I test it, i have not yet found a top speed in atmo.. its all acceleration from the time you engage throttle to 100 til you decrease it to below 15 percent. Jet engines wouldn't be able to get to these speeds unless they were heavily modified and even then, fuel capacities would be so cumbersome and inadequate that it doesn't make sense to make it.

Yep.
The infinite fuel is easy. You can either edit the mass of a tank to zero or edit the hidden properties of the engine to have a .001 fuel consumption and also a very low cost per watt equals nearly infinite fuel with only a small amount of fuel to be found.
I like the 2nd way better -
