Right now ION engines are too power hungry (or solar panels too inefficient).
Here is what I propose: set the ION engine power draw to 4 in the craft XML: <Engine electricalConsumption="4" />
This will allow you to generate more power with two 10x1 solar panel arrays around Droo. It will even allow you to run the ION engine with two 10x5 solar panel arrays at around 28% throttle around Tydos.
If the power draw that I propose feels too low here are some more values that will work just fine around Droo:
- 11: for two 10x3 solar panel arrays
- 25: for two 10x5 solar panel arrays
These are all the tests that I've done.

@pedro16797 Thanks for the tip, I didn't think of using subassemblies for modded parts.

@sumeee I edit XML files for all my crafts, I don't find it annoying, it's just until they add a mod platform.
If you usually use edited motors the fastedt method I've found is to edit one and save it as a subassembly.

You are correct @pedro16797, but I'm talking about gameplay balancing. This game (or stock KSP) doesn't have the necessary tools to make ION engines fun to play.
How you use an ION engine is very different from how would you use an conventional chemical rocket engine and some sacrificing need to be made regarding real life accuracy so the game will be more fun to play.
I realize that this is not for everyone, but what I propose doesn't need to be integrated in the main game, this is just for some people that what ION engines to be more accessible (and you will need to manually edit the craft XML file).

I think it's accurate, ION engines eat lots of power in real life
