How do you tweak something's reflectivity or emissiveness on mobile?

When in the designer there is an arrow between the add parts and menu button. Click it and it will bring you to a list of options. Tap and the yellow paintbrush, it will bring you to the pallet. Tap on a color square and it will pop up a menu bellow. Under the color chooser there is some text that says “style”. Click the arrows until the text between the arrows says “custom”. It will give you a assortment of options including smoothness, how metallic it is, emission, and detail. Hopefully this helps.
