Is there any config file / option where I can increase the maximum size of the fuel tanks / engines ?

@Teln0 go to AppData/LowLocal/Jundroo/SimpleRockets2/ UserData in there youll find the files

You would have to use xml, access the xml file of the craft you want to change locate the part and increase the size
