So my plane elevators push the plane upwards but the nose down which crashes the plane into the ground, but going the opposite way sends the plane downwards.

Wings might be inverted, i have that problem a lot when building planes, it usually fixes it

probably you put pitch on both wings, remove it on the main wings

This is kind of a problem you have to deal with. Especially with flying crafts like my Kuiper X-4. The solution for crafts is to get the wings into the right position between the COM COL and COT to get just the right amount of angles and maths and stuff. It’s complicated.
