I would like the ability to change a part, like say make a fuel tank a hanger with doors. I wish not to dismantle and rebuild 80% of my craft, because symmetry is so buggy.

You can control right click in order to remove only that part, then place the new one and reattach the rest of the craft.
You can also go to the xml file and change the part manually
