Idk i hope i can upload a screenrecording of this, but whenever i try to fly normally it just decides to go mach 5 by itself when the engine can get it to like mach 2 with afterburners and supercruise at mach 1

Actually the supercruise is about mach 1.7
I forgot this is a newer version of a plane i worked on prior

It only happens below 2.5km altitude and about mach 0.9 all the time
