To build custom nozzles what you want to do is get a fuel tank, make its radius like half a meter or so and its length doesn’t really matter. Then grab a hinge rotator and put it on the front face of the fuel tank set its distance to 10deg then use rotational symmetry (found in the mirror tab) set it to like 15 - 30 then get another fuel tank and shape it like a small paddle from a jet engine put it on the rotator and set the rotators input to throttle. Get a jet engine (part) and scale so it is short attach it to the very first fuel tank and then grab a rocket engine and make it short as well attach it to the jet engine and center it set both the engines inputs to throttle then your done!
